This is my 4th year to celebrate St. Patrick's Day by making corned beef brisket. Costco always stock Bill Bailey's Corned Beef Brisket late February to beginning of March.
It's very simple to make. I put the meat, cabbage, and water in a slow cooker. I set my slow cooker to low. Then I go to work and come back. Dinner is ready when I come back home (10-12 hours). I still have to make mashed potato.
I like to eat my corned beef brisket with the juice. I don't know how authentic this is, but I like it.
