This is the Costco boneless lamb.
I unwrapped the outer netted layer, marinated overnight and smoked the next day.
This was an awesome choice as the small packaging gives you an option to only open up what you need so you can preserve the rest for later time. Feta, cucumbers, lettuce and tomatoes were also purchased at Costco. You could even use the Nan flat bread at Costco instead of gyro bread, great substitute.
Homemade Refrigerator Pickles
Costco’s has the little cucumbers for years and work really good to make your own. They stay fresh in the fridge for months and are crispy because they are not cooked. Tip: I brought the big jar to a potluck and was a crowd hit, all gone.

Frittata Casserole
Pick out any: Eggs, cheese, “veggie/meat/potato-precooked” of choice. Can be from leftovers, preferably to use up for a great morning group breakfast. If you add bread cubes its a Strata. Google a recipe today!
If you prefer to make a breakfast sandwich buy either English muffins or crescents that are stocked year round at Costco and toast. Don’t forget your fruit.

The flavor of this bacon is really good because it’s not to salty, smokey or fatty.
Organic Sundried Tomato Pesto with basil

I just noticed this new item and had to try it. It is very good, my family loved it. The best thing about it is that it isn’t salty. Lower in sodium and it uses almonds instead of pine nuts “if you have an allergy”. I was able to add, Costco’s signature manchego cheese to it and it still was not salty.

It came in and is still going. I decided to smoke some for the freezer and I found another new item at Costco. Beef short ribs. Bourbon crown maple syrup I used for the flavoring.

Happy Be-lated Fathers Day

Per husbands Fathers Day dinner request: Spinach ravioli’s. We cooked down Costco spinach first. Then I used my new red kitchen-aid stand up mixer I got on coupon sale from Costco to make homemade pasta.

We all need a little help. Homemade with oils from Costco. We love the outdoors, love to hike and forage. I make other salves and upon reading about ingredients I ran across this Balm Of Gilead I had never heard of, it derives from biblical times. The buds of cottonwood tree’s here in Washington state were ready in February. I picked twice. Once with my Mother and Father in Law (retired) on their property in Woodinville while visiting them. My father in law was very happy to get his tractor available to pick high branches if needed and get the bonfire ready to burn the unwanted branches. They have an 11 acre ranch that they have horses on and board with a really cool creek that runs the entire length of it. They helped us pick the buds for about an hour. I set that batch in a jar and stored in the cupboard. A week later I went out hiking with my girlfriend in Duvall to pick another batch, to have sit in another jar and let them extract the richness of the sap. It’s impressive, it bleeds red pitch. After a few months I made the salve. I used a new dish soap and got allergic to it and got a itchy rash. I started using this and it relieved it and took the rash away, so why not, right?
