That Brie cheese must be good. I see you get it a lot. How do you eat it? On crackers? I’d like to try it but shouldn’t be eating high fat foods.

Brie cheese, to me, is a special treat. They are not THAT expensive (under $6). But, I wouldn’t buy them that often. I only stock them at home for my female friend.
I try not to eat fresh (new) Brie cheese, but I would eat it when it’s close to (or past) "sell by" date. They say older cheese brings out the unique taste of Brie. I can’t tell the difference, but…
Ideally, I would take out the cheese from refrigerator a few hours earlier to bring it to room temperature. If not, I’ll have to microwave quick.
I usually eat with crackers. Sometimes I just eat cheese only.
